Honey Lemon Thyme Sparkler Mocktail

Fresh thyme combines with lemon and honey in this refreshing, not too sweet sparkling drink. So light and festive everyone will want one!

In my e-book, Nourishing Fertility: An A to Z Guide, I talk about the concept of “bumping-out” foods like coffee and alcohol to optimize fertility. I wanted to provide you with some alternatives since I am all about nurturance and not deprivation.

I asked my friend, Robyn, of Real Food Whole Life, to craft a fertility friendly mocktail and she came up with this delicious Honey Lemon Thyme Sparkler. She is so brilliant! HONEY LEMON THYME SPARKLER

1 bunch fresh thyme

½ cup honey

6 lemons

1 liter soda water (plain or lemon)

Prepare the syrup:

  • In a small sauce pan combine the honey with half of the thyme.
  • Warm over low heat for five minutes, being careful not to boil.
  • Remove from heat and let cool.
  • Once cool, remove the thyme stems from the honey. Some thyme leaves may remain.
  • Juice 4 of the lemons, adding the juice to the honey thyme mixture.

Prepare the sparklers:

  • Slice the remaining 2 lemons into rounds.
  • In each glass, add 1 ½ tablespoons of the syrup. Add several slices of lemon, ice, and top with the soda water.
  • Stir to combine, adding a few extra sprigs of thyme for garnish.
